Vietnamese Curry Lamingtons: Tokyo Lamington and Hello Auntie are a match made in Lunar heaven

It’s no secret now that Tokyo Lamington is one of the best new dessert shops in the country. After all, they are taking the most beloved spongy treat the country has ever known and layering on a dazzling amount of creativity, with everything from Davidson Plum to Pandan & Coconut sprucing up the classic.

Now they’ve gone and introduced their first collaboration with new-wave Vietnamese restaurant Hello Auntie, with a limited edition Lunar New Year collection of three new lamingtons available from now until Sunday 21st February.

The Asian-fusion lamingtons available include two sweet creations and one oddball savoury lamington that’s been worked up by Hello Auntie’s Cuong Nguyen – that is, a Vietnamese Curry Lamington featuring MB2 beef red carry katsu sandwiched in between two savoury lamington sponge pieces with cocoa butter, fried shallots and roasted coconut flakes. Now I may be wrong, but this could be the very first time the classic sponge treat has been turned into a savoury frankenfood.

The other two sweet lamingtons are the Pandan & Coconut lamington mentioned above, with pandan custard, pandan white chocolate sauce, and coconut flakes. Then there’s the Pineapple Tart Lamington, with pineapple jam, pineapple white chocolate sauce, and butter cookie crumbs.

You can grab the Lunar lamingtons individually for $7 each or $21 for a box of free from the Hello Auntie x Tokyo Lamington pop-up cart currently down at Darling Square, posted at Shop 2, 16 Nicolle Walk in Haymarket.
